#68: Expert – Karen Diggs – Fermented Foods

Karen Diggs is a Certified Nutrition Consultant & Therapeutic Chef and inventor of the Kraut Source.

After graduating from the California Culinary Academy, Karen got on a jet and flew off to Hong Kong.  There, she worked as a chef for the Mandarin Oriental Hotel, and also helped to open two eateries in that magnificent city of 7 million people (crowded into 426 square miles).

In 2004, while washing dishes in her kitchen, Karen had an epiphany!  The epiphany went something  like this: “Wow, maybe it’s good to combine cooking with nutrition?!”  After all, didn’t someone from long ago say ” Let food by thy medicine and medicine by thy food”?  (It was Hippocrates who said that, by the way.)

So, Karen went back to school and obtained her certification as a Nutrition Consultant in 2006 from Bauman College. Now, Karen merges her deep and innate culinary skills with her knowledge of holistic nutrition to help individuals achieve optimal health through detoxification and weight loss workshops, therapeutic cooking classes, and private nutrition consultations.
Karen Diggs, CNC is a member of the National Association of  Nutrition Professionals.

She lives by the simple motto: “Eat Right, Be Well.”

#62: Expert – Jason Earle – Environmental Mold Testing

Jason Earle What if your Brain Fog isn’t caused by a Lyme infection? Jason teaches us the nuts and bolts of determining if your house is toxic with mold. Mold toxicity can present exactly like Lyme disease. It’s important to know the difference. Jason is the founder of 1-800-GOT-MOLD.

Jason Earle was misdiagnosed with Cystic Fibrosis when he was 4 years old. Additional testing found asthma, pneumonia, and multiple severe allergies. However when he was 12, and he and his family moved, his allergies and asthma disappeared almost instantly. He says it is clear to him he lived in a home with a chronically damp environment, and though at the time the medical community had not widely accepted mold as triggers for asthma attacks and allergies, the mold in his childhood home had probably made him hypersensitive. Without the constant exposure to mold he became “extraordinarily healthy.”

His early childhood experiences gave him a passion for learning how to protect people from mold. After years of working with industry experts and over 1500 mold inspections, Jason created the 1-800-GOT-MOLD? Mold Assessment Process. His company’s mission is “Helping people breathe easier, one person at a time”
